Quinoa is a healthy and delicious grain that can be used in a number of ways to create a tasty and satisfying alternative to a meat based dish. My family has been enjoying these Tacos for a couple of summers now and they are an enjoyable and protein filled meal.
Cook 1 cup of Quinoa according to package directions, you can substitute veggie broth for the water to add additional flavor. Once the Quinoa is cooked, let cool for 15 to 30 minutes. Then add 1 jar of Green Salsa (red if you prefer), 1/2 cup of chopped red peppers, 1/2 cup drained corn, 1/2 cup sliced black olives, 1/2 cup chopped cilantro, chopped green onions, and you can add finely diced jalapenos for an extra kick. Chill overnight and fill your taco with a little lettuce in the bottom of the shell, fill the balance of the taco with the Quinoa filling and then top with sharp cheddar if you like. As an alternative you can also serve this on a bed of greens for a beautiful summer salad. Savor the flavors and repeat!
